Processed cheese

Processed cheese is made by shredding and blending cheese, adding melting salts and other ingredients, heating, stirring the melted mass for several minutes and cooling. Processed cheese has a longer shelf life, is easy to handle and is homogeneous. In general there are two types of processed cheese: spreads and sliceable blocks.

Perfecta offers the following types of ingredients which can be used to make processed cheese:

  • Different types of cheese (Mozzarella, Cheddar, Emmental etc.) to enhance the cheese flavour;
  • Butter for a natural dairy taste and it gives the processed cheese a soft texture;
  • Sweet whey powder is a cost effective source of lactose and proteins;
  • Rennet casein has a high level of proteins and calcium delivering maximum levels of firmness and functionality to processed cheese;
  • Milk Protein Concentrate is a cost effective source of proteins.
